Feel Good Mexican Black Bean Soup

Flavorful and nutritious Mexican black bean soup, topped with anti inflammatory onion for immune boosting, and sharp tasting cheddar cheese. Ingredients

  • 2 cups black beans, soaked for 8 hours
  • Broth (optional)
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 tablespoon chopped fresh cilantro
  • 1 tablespoon Mexican seasoning
  • ¼ teaspoon cayenne pepper
  • salt to taste

Directions

  1. Soak beans with 6 cups water for overnight in your vitaclay pot.
  2. Drain soaked beans (optional)
  3. Your black beans will yield to 4 cups soaked beans. Add Add 6 cups water or broth and your favorite seasoning to cook for 1 hour.
  4. Top with onion, cheese and serve.
