Eggplant With Basil and Chiles

August is peak eggplant season; look for any of eggplants in farmers markets or stores. They are so easy to make in VitaClay pot! Eggplant usually takes a lot of oil in stir fry to make it tasty and take long time to stir fry by the stove. Steaming is the healthiest way but also took longer time to cook. I just figured an easy way to make eggplant tender and full of flavor with much less oil needed! My clay pot makes it creamy-tender with minimal cooking.

Eggplant promotes Bone Health and fights against Osteoporosis. Improves Digestion. Helps in controlling Blood Pressure. Findings of animal studies suggest that nasunin, an anthocyanin in eggplant skin, may help protect brain cell membranes from damage caused by free radicals. Nasunin also helps transport nutrients into cells and move waste out. Anthocyanins also help prevent neuroinflammation and facilitate blood flow to the brain.

My ingredients made really simple👉 full pot of chopped eggplant (I used a large one) + 1 cup water + basil leaves + chili peppers + olive oil + shrimps! It came out so delicious! Best of all it was just so easy to set it up in my vitaclay!
I did sauté the shrimps while cooking eggplant and added them in the last 5 minutes of cooking.


Here’s a fancy one from bon appetit! I adjusted it to Cook in my clay pot!

Ingredients

  • 2 servings
  • 2 red chiles, such as cayenne, Fresno, or jalapeño or to taste
  • 1 Tbsp. honey
  • Pinch of kosher salt
  • 3 medium Japanese or Chinese eggplants (about 12 oz. total)
  • 3 Tbsp. extra-virgin olive oil, divided
  • ¼ lb. shrimps or cooked meat or tempeh crumbles, or crumbled tofu
  • 3 garlic cloves, thinly sliced
  • 1 tsp. toasted sesame seeds
  • ½ cup basil leaves, plus more for serving
  • 2 Tbsp. unseasoned rice vinegar or lemon juice
  • 2 tsp. tamari or soy sauce


Directions

👉1 cup water and all ingredients except basil and shrimps in your VitaClay pot.
👉set on your clay pot to cook for 30 minutes.
👉while you are cooking, sauté shrimp with oil in a saucepan. After shrimp turns to pink, add lemon juice, soy sauce and basil to stir for a couple of minutes. Transfer to your clay pot to mix with almost cooked eggplants. Let it cook through the cooking cycle or until eggplants become tender.
👉 Transfer eggplant to a plate and drizzle with remaining sauce. Top with more basil.
