I love split pea soup. Something about it is comforting, warming and filling, and I make it pretty regularly in my house.

At first my son turned up his nose-after all, it's green and  doesn't  look  super  appetizing  at  first glance.

But then he tried it at school, and everything changed.

Now he asks for it all the time, and I'm happy to oblige. Why wouldn't I make this delicious soup all the time? It's easy, nutrient  dense and delicious.

Split pea soup is also a great pot-luck dish, or a great meal  to pack up and take to someone  who is  sick.

And it's affordable and full of veggies! Try this super easy, delicious recipe today-it may become a family favorite to you too!

Ingredients for Split Pea Soup in Clay:

  • 2 - 3 cups split peas
  • Water to fill pot (at least 4:1 water:beans ratio)
  • 1large ham hock
  • A few sprinkles of turmeric powder
  • 1onion, finely chopped
  • 3-4 stalks celery, finely chopped
  • 5 carrots, peeled and finely chopped
  • Salt & pepper, to taste

Directions for Split Pea Soup in Clay:

  1. I like to soak my split peas, because the cooking time is significantly reduced. Soak peas in salty water overnight.
  2. Drain and rinse peas. Add water, ham hock, and veggies to clay pot
  3. Cook on "slow" setting 1-2 hours
  4. You'll have a creamy, smooth split pea soup just in time for dinner!
