Easy, Hearty, Healthy Slow Cooker Lentil Soup in Under an Hour

Complete your vegetarian menu to start the year right with this hearty lentil soup - ready in just one hour! I don’t just settle for a bland lentil soup; I make mine primarily with healthy vegetable, leafy greens and season it with my favorite spices, ground pepper and vinegar for a kick; it’s good for seconds, thirds and more! I love cooking extra for my work lunch as well. This has been a staple in my kitchen as it’s easy to make whenever I want to lighten my meal or kick off the cold with its warm and creamy soupy goodness. If you cook just half the recipe, it may take only 30-40 minutes. Try making this delicious slow cooker lentil soup! Ingredients:

  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 (14.5 ounce) can crushed tomatoes
  • 2 cups dry lentils
  • 8 cups water
  • 1/2 cup spinach, rinsed and thinly sliced
  • 2 tablespoons vinegar
  • salt to taste
  • ground black pepper to taste

Directions:

1. In a large pot, heat oil over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes. Transfer to Vitaclay pot.
2. Add lentils, and add water and tomatoes. Set on stew or fast for 1 hour to cook.
3. When ready to serve, stir in spinach and cook until it wilts. Stir in vinegar, and season to taste with salt and pepper, and more vinegar if desired.
