Creamy, Vegan, Delicious, Healthy Cauliflower Soup Cooked in Clay

This dairy-free, vegan soup is white and very creamy and smooth. You’d never guess that it doesn’t contain cream or any dairy! The trick is that the cooked cauliflower and onions blend so smoothly that it truly looks, tastes and feels like creamy soup when you eat it!

So this recipe is great for people who can’t tolerate dairy or have dairy restrictions for other reasons. Because dairy intolerance or not, who doesn't love a nice warm creamy soup? And now that I think about it, what if I wanted to sub this cauliflower and onion mixture for cream in other recipes? It could work! Clam chowder, cream of mushroom… the possibilities are endless! Ingredients:

  • 1 large head of cauliflower, chopped (~2lb)
  • 2 carrots, peeled and diced
  • 2 medium onions, sliced thinly
  • 3 cloves garlic, minced
  • 4 c broth        
  • 1 t real salt
  • ½ c dry white wine or sherry (optional)
  • Black or white pepper
Toppings:
  • 2 T chives, finely chopped
  • 1 T chopped parsley
Directions:
  1. Add all ingredients into the clay pot
  2. Set to “soup” and cook for 1 hour
  3. Using a hand-immersion blender, blend the soup until smooth, white and creamy
  4. Sprinkle topping herbs over each serving
*This soup can be made vegan/vegetarian with vegetable broth, and either way it is Paleo diet friendly and gluten free!
