Clay Pot Macaroni & Cheese (Just Like how Mom Used to Make it)

As the weather cools, we instinctively want to spend chilly nights indoors, curled up under a blanket or by the fire, reading a good book or watching a movie.

And during those times we crave comfort food: filling, warm, delicious food that reminds us of youth and of good times with family and friends. Often comfort food is something that someone else made for us: a mother or grandmother; lovingly preparing a dish that only she could make.

That's why sometimes we're tempted to just buy a packaged version of our favorite comfort foods: macaroni and cheese, lasagna, chili or soup. We don't think we could ever make it as well as she did. So we settle for something from the store.

Something not quite as good, and maybe it has a few not-so-great ingredients and preservatives, but at least it's easy. Well, with VitaClay you will discover that what used to be a daunting home-cooked meal is now a snap.

Take for instance this delicious clay pot mac-n-cheese. You won't believe your mouth! The texture! The flavor! It's just like mom used to make. Only now you can make it with VitaClay.

Ingredients:

  • 2 ½ c whole milk
  • 12 oz half & half or heavy cream
  • 8 oz cream cheese
  • 16 oz macaroni or other pasta (I like this gluten-free one)

Directions:

  1. Add all ingredients except pasta into VitaClay cooker
  2. Cook on “stew” setting for 20 minutes, then open and stir
  3. Stir in pasta, then close and seal
  4. Cook for another 10 minutes (or leave on warm for about 15 minutes)
  5. Open and stir
  6. It will thicken as it cools, but if you want it a bit thicker, leave it on warm for a few more minutes with just the clay cover (electronic housing open)
  7. Serve, sprinkling with more shredded cheese and other garnishes, if desired
