Cheeseburger Pasta Casserole: One Pot Meal Cooked in Clay!

Usually casseroles are made in the oven, but I like to adapt them for VitaClay because the clay always makes my dishes taste so great, and I don't have to babysit the food while it cooks.

I don't even have to be home! Or awake! I can run errands, take a nap, or go pick up my kid from school while dinner is cooking. Who knew?

I also like to take certain flavors and put them into unexpected dishes, such as the case for this cheeseburger casserole I made in my VitaClay.

Cheeseburgers are super yummy, but when you get that cheeseburger flavor and put it into something unexpected, like soup or a casserole, it's like a big, yummy surprise!

Ingredients for Cheeseburger Pasta Casserole in Clay:

  • 1lb grass-fed ground beef (or bison)
  • ½ small red onion, finely chopped
  • 1tomato, diced
  • 2 to 2 ½ c broth (less if using cooked pasta)
  • 1½ c pasta
  • 2 T mustard
  • 2 T ketchup
  • 2 Tdill pickle relish
  • 1 T steak or other favorite seasoning (no salt)
  • ¼ T garlic salt
  • 1c shredded cheese
  • chopped scallions (optional)

Directions for Cheeseburger Pasta Casserole in Clay:

  1. Add pasta and broth to the clay pot
  2. Break up the ground meat and add it to the pot, along with all of the other ingredients except cheese and chopped scallions
  3. Cover and cook on "Stew" setting for 30 minutes (if you use VM7800 models, add extra 1 cup broth and set on Fast for 30 minutes)
  4. Open and stir, checking the liquid level and the pasta
  5. If it's not quite done, leave it on warm with just the clay cover (housing open) for 10-15 minutes
  6. Serve, topped with cheese and chopped scallions
