Bok choy shiitake mushroom soup

Bok choy shiitake mushroom soup in #homemade broth, 15-20 minutes cooked in my #vitaclay , simply add these two ingredients and water or broth and set it on stew for 20 minutes. Full flavor and it is #antiinflammatory !

Bok choy is a Cruciferous vegetable which contains sulforaphanes that help reduce inflammation and detoxify liver. Bok choy helps promote bone health — including iron, calcium, phosphorus, magnesium and bone-building vitamin K. According to Dr. Axe, “The primary mineral found in bones and teeth is made with calcium and phosphorus. Vitamin K is proven to increase bone density in osteoporotic individuals, as well as reduce fracture rates. The combination of these minerals greatly contributes to the growth and maintenance of healthy bones and muscles.”

Ingredients:

  • 3 cups chopped bok choy
  • 1 cup shiitake mushrooms
  • 3-4 cups water or broth
  • Salt and olive oil to taste

Directions:

  1. Add all ingredients in your vitaclay #clay pot
  2. Set on stew to cook for 20 minutes.
  3. Adjust taste with oil and salt.
  4. if you have a 6 qt stock pot, double the cooking volume up to 6-8 cups cooking volume and set to cook for 30 minutes only (ingredients and water)
