Bitter melon in word, it’s bitter! You may not used to the taste. After a few times eating it you may actually become a fan to like the taste depending on how you cook it!
Choosing bitter melon with softer light color or yellow skin and red seeds inside, it tastes not that bitter at all but a little sweet. When you roast it in some meat sauces and oil, I used 1/2 cup of roasted duck’s sauce and fat to cook a couple of these bitter melons, it was pretty tasty! Sorry I didn’t take a photo of the dish as I could not wait to eat them because they were so good, soft and surprisingly tasty in my leftover roasted duck fat and gelatin formed sauce!
Ingredients:
1/2 lbs light color bitter melon
2 tablespoons olive oil or coconut oil or chicken or duck or turkey fat
1/2 cup meat sauce (from roasted turkey or duck or chicken)
2 -3 tablespoons balsamic vinegar (optional)
Directions:
1. Add all in your VitaClay multicooker. 2. Set on stew to cook for 20-30 minutes
