Best Ever 30 minutes One Pot Meal Comfort - Lemon Chicken Olive Pasta

Best ever One pot meal, a bowl of comfort! Yum yum yum!!!!

How adventurous cooks are you really? Tired of following other’s recipe cooking? Why not trying to create your own recipe for the weekend cooking?

My pot was a half full of chicken wings. My original thought was to make teriyaki chicken wings, then I thought about Buffalo wings! In the last minutes, I changed my mind to add my “last year leftover” preserved olives in a jar! I picked up a small lemon from my lemon tree, chopped it in quart and add some garlic onion powder to make my last minute lemon olive chicken “tagine”, cooked for 30 minutes! Mmmmnnn, the smell was so delicious! Then I thought why not add a cup of pasta to make it one pot meal? So I did! This was sooooo yummy that I got to make it again!

Ingredients

  • 12 chicken wings, or 2 lbs chicken breast
  • 1/2 lemon or small lemon, cut
  • 1/2 or 3/4 cup pitted olives
  • 1/2 or 3/4 lemon, quartered
  • 1 table spoon of garlic powder or 3 cloves
  • 1 table spoon of onion powder
  • 1 dash of curry powder
  • 1 dash of paprika powder
  • 4 slices of ginger 
  • 1 cup water (add 1 1/2 cup water instead if add 2 cups pasta in last 15 minutes of cooking)
  • 1 cup pasta of any kind
  • Salt pepper to taste

Directions

  1. Add all ingredients except pasta in your vitaclay pot. Set on Stew to cook for 40 minutes (if choose breast, cook for 30 minutes)
  2. In the last 15 minutes of cooking, add pasta in. Blend well to let pasta immerse in water. Cover the lids and continue to cook until pasta becomes al dente. 
Serve immediately! Enjoy!
