Crave This: Seaweed Rice in Your VitaClay!

Seaweed is a great addition to your diet: most varieties are a great source of iodine, which is a nutrient for which most of us are deficient. 

Studies have shown that increasing our intake of dietary iodine can lessen the risk of many types of cancer, including breast and prostate cancers. Increasing iodine can also support and heal the thyroid and prevent thyroid problems. 

I love the taste of seaweed: it's a salty treat that almost tastes like potato chips to me; so when I'm craving something salty and filling, I grab a packet of nori and start crunching: it's a great healthy alternative to other salty snacks!

I also love to add seaweed to my rice, and it's so easy to do! The seaweed adds a slightly fishy, salty flavor that you will love and it goes with almost any dish. If you don't like to snack on seaweed sheets like I do, this is a great way to get a lot of crucial minerals and nutrients into your diet. 

Ingredients for Seaweed Rice

  •  2 medium pieces Wakame, (2 T soaked and chopped)
  •  2 T chopped Dulse seaweed (or get granules)
  • (any type of seaweed you can find at a health food or Asian store will do)
  •  2-3 cups warm water or broth (make your own broth! Recipe below.)
  •  ½ medium onion, minced
  •  2 large cloves garlic, chopped
  •  1 cup long grain brown rice
  •   Salt and pepper to taste.
 Directions for Seaweed Rice
  1. Soakbrown rice in warm water for 30 minutes and drain.
  2. Rinse Wakame, and soak in 2½ cups warm water for about 5 minutes. Squeeze excess water and chop. Save water.
  3. While seaweed is soaking, chop Dulse, onion and garlic.
  4. Heat 1 T of coconut oil in a medium saucepan. Saute chopped onion over medium heat for 2 minutes, stirring frequently. Stir in garlic, rice, chopped seaweed, and a bit of soaking water.
  5. Place above contents into your VitaClay® Pot. Select the rice setting and it will cook for about 30 minutes.
  6. Season with salt and pepper to taste.
