Yogurt is one of the best sources of probiotics, the friendly bacteria that can improve your immunity, digestive health, mental health, bone health and skin health.

According to the GAPS diet, when you ferment yogurt for 24 hours, the bacteria in the yogurt culture consume the milk sugars (lactose), growing in numbers until there are about 708 billion beneficial bacteria in 1 cup of yogurt which is 50 times more probiotics than store-bought probiotic pills.

This pot of yogurt was made overnight. I increased the fermentation time from 8 hours to 12 hours as I wanted to have more probiotic counts in my yogurt. This makes it virtually lactose-free and easier to digest.

Clay is the best cooking medium to make yogurt. Why? When you make yogurt in clay pots, the clay absorbs the excess water and so the yogurt is much thicker and richer. Clay is alkalizing that neutralizes acidity to make your yogurt naturally sweeter without much sugar needed!Good for your gut, bone health, ease of anxiety, and stress. How? Add the last batch of yogurt and mix with milk in your vitaclay pot. Set on yogurt the night before bed. When you wake up, your yogurt is ready!

You may drink it or make it parfait with pineapple or your favorite fruits when it is lukewarm or store it in your refrigerator for a few hours allowing your yogurt to settle to become more firm. After a few more days your yogurt will become creamy. Honey or fruit for toppings will do the magical wonders! Yum!😋

Ingredients

  • 1.5 liters or 2-quart grass-fed whole milk
  • 3-6 tablespoons of last batch yogurt or get good quality Greek yogurt that has listed with 5-6 cultures.

Directions

  1. Add 1 cup milk and yogurt starter to your vitaclay pot and mix well with a wooden spoon.
  2. Add the rest of the whole milk in and mix well.
  3. Set on yogurt for 8 hours or more.
  4. Top with your favorite fruits, pineapple, or honey
