Mung beans are famous for their ability to detox your body, clear up your skin, lower your blood pressure and cholesterol, cool inflammation, and even help you lose weight.
Eaten on a consistent basis, mung beans can prevent and address serious chronic diseases such as cardiovascular disease, diabetes, cancer, stroke, osteoporosis, and obesity.
Oats are rich in silicon and phosphorus, and help to renew the bones and connective tissues.
Oats can restore nervous and reproductive systems, strengthen the spleen-pancreas, build and regulate qi, strengthen cardiac muscles, and remove cholesterol from the digestive tract and arteries.
1 cup adzuki or red beans
1/2 cup mung beans
1/2 cup steel cut oats
4-5 cut water or broth
Below are optional if you don’t have homemade bone broth or veggie broth-
1 2-inch piece of kombu
1 bay leaf
1 shallot, chopped
1 clove garlic, finely chopped
1 medium carrot, chopped
1 tablespoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
1. Soak adzuki and mung beans in water overnight. Drain beans and discard water.
2. Add in your clay pot along with bay leaf, shallot, garlic, and carrot. Cover with water.
3. Set on soup to cook for 1.5 to 2 hours or until beans are very tender. (Optional: skim off any foam that forms on top of the beans.)
