Chicken Soup au Pistou is a comforting French-inspired soup filled with tender chicken, creamy Great Northern beans, tomatoes, potatoes, carrots, and green beans. Made in the VitaClay cooker, this easy one-pot version lets the ingredients gently cook together before being finished with fragrant pesto and Parmesan for a fresh, savory boost of flavor.
Makes approximately 8 servings.
1. Prepare the ingredients.
Cut the chicken into bite-size pieces and prepare the onion, carrots, potato, and green beans.
2. Load the VitaClay pot.
Add the chicken, onion, chicken broth, Great Northern beans, tomatoes with their juices, carrots, potato, salt, and black pepper to the clay pot. Gently stir to combine.
3. Cook in VitaClay.
Close the cooker and select theSoup orStew setting. Cook for approximately1½ to 2 hours, or until the chicken is cooked through and the potatoes and carrots are tender.
4. Add the green beans.
Add the green beans during approximately thelast 15–20 minutes of cooking so they retain some texture and color.
5. Finish with pesto.
Once cooking is complete, stir in the ¼ cup pesto, or add pesto individually to each bowl when serving. The original recipe suggests about 1½ teaspoons per serving.
6. Serve.
Ladle the soup into bowls and top with grated Parmesan cheese, if desired.
For a more flavorful result, I wouldadd the pesto after cooking rather than cooking it for the full cycle. This helps preserve the fresh basil, garlic, and olive-oil flavors that givepistou-style soup its character.
