This Tuscan White Bean, Tomato & Spinach Soup combines juicy tomatoes, tender white beans, fresh spinach and fragrant basil in a savory broth. It’s colorful, comforting and easy enough for a busy weeknight.
We adapted the original stovetop recipe for VitaClay cooking, replacing the canned ingredient measurements with convenient cup measurements and simplifying the method into an easy one-pot recipe.
Instead of standing over the stove to bring the soup to a boil and then adjusting the heat, VitaClay lets the ingredients cook together gently with minimal hands-on attention.

Optional for serving: freshly grated Parmesan, fresh basil, cracked black pepper or crusty bread.
Simply substitute vegetable broth for the chicken broth and use a vegetarian Worcestershire sauce or omit it.
Add the diced tomatoes with their juices, chicken broth, sugar, dried basil and Worcestershire sauce to the VitaClay clay pot.
Gently stir to combine.
Place the clay pot into the VitaClay cooker.
Select the Soup setting and cook for approximately 1 hour, or until the tomatoes have softened and the flavors have come together.
Toward the end of cooking, stir in the cooked white beans and fresh spinach.
Continue cooking for approximately 10–15 minutes, just until the beans are heated through and the spinach is tender.
Because the beans are already cooked, adding them near the end helps maintain their texture.
When the soup is finished, stir in 2 teaspoons extra-virgin olive oil.
Taste and adjust the seasoning if desired.
Ladle the soup into bowls and serve as-is, or finish with Parmesan, fresh basil and freshly cracked black pepper.
A slice of rustic or crusty bread makes a simple accompaniment.

A pinch of red pepper flakes can also add a pleasant touch of heat.
Can I use canned white beans?
Yes. Drain and rinse them first. You'll need approximately 1¾ cups.
Which white beans work best?
Small white beans, cannellini beans or Great Northern beans all work well.
Can I use fresh tomatoes instead of canned tomatoes?
Yes. Use approximately 3½ cups chopped ripe tomatoes. Depending on how juicy the tomatoes are, you may need a little additional broth.
Can I use frozen spinach?
Yes. Thaw it and squeeze out excess moisture before adding it toward the end of cooking.
Can I make this vegetarian?
Yes. Replace the chicken broth with vegetable broth and omit or substitute the Worcestershire sauce if necessary.
