Slow Cooker Scary Treat - Cinnamon Sugar Butternut Squash

Who wouldn't want a scoop of Butternut squash for a weeknight dinner? One of my fall favorites is this buttery squash recipe that's meaty and sweet to taste. This is so good; you barely need seasoning at all! It's one thing I look forward to when the season gets colder.
 
It's so easy to make in your VitaClay cooker and you can serve it with just about everything from holiday ham or turkey, and whole chicken to green bean casserole, cranberry sauce, and collard greens.
     
 

Ingredients:

  • 1-2 pounds butternut squash
  • 1/2 cup butter 1 stick
  • 1/4 cup packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 pinch ground cloves
  • 1 dash salt
  • I cup water

Directions:

1. Peel the squash, cut in half lengthwise, then cut into 1-inch cubes.
2. Place the squash into your VitaClay cooker and add water to it.
3. Cut the butter into slices. Place the butter parts all over the squash.
4. In a small bowl mix together the brown sugar, cinnamon, nutmeg, cloves, and salt. Sprinkle the mixture over the squash and butter.
5. Cover and cook on "stew" for 30-40 minutes.
6. Serve and enjoy.
