Pico de Gallo Black Bean Soup

We converted this Pico de Gallo Black Bean Soup from Taste of Home  in our Vitaclay!  

Get a taste of bold and flavorful Mexican-inspired cuisine with this easy-to-make Pico de Gallo Black Bean Soup - a hearty, healthy, and satisfying meal that's perfect for any occasion!

     

Ingredients:

  • 4 cups home cooked black beans 
  • 2 cups vegetable broth
  • 2 cups pico de gallo
  • 1/2 cup water
  • 2 teaspoons ground cumin
  • Optional toppings: Chopped fresh cilantro and additional pico de gallo

Instructions:

  1. In a bowl, mix together the black beans, pico de gallo (or salsa), olive oil, cumin, smoked paprika, salt, and pepper.

  2. Pour the vegetable broth or water into the VitaClay cooker and add the black bean mixture.

  3. Close the lid and cook on "Stew"  or “soup” for 1-2 hours, or until the soup is heated through and the flavors have melded together.

  4. Once the soup is done cooking, ladle it into bowls and add any desired toppings, such as shredded cheese, diced avocado, sour cream, or chopped cilantro.

  5. Serve immediately and enjoy!

Note: You can also add cooked rice or quinoa to the soup for added texture and nutrition. Additionally, you can adjust the amount of spices to your personal taste.
