One Clay Pot Meals: Spicy Quinoa Black Bean Veggie Surprise!

 One pot meals are my favorite. They’re super quick, versatile, yummy, and so easy to make. Then did I even need to mention there is only one pot to clean? VitaClay makes one pot meals even faster, easier and more delicious: now you can cook rice or other grains with beans, veggies and meat—and it all comes out perfectly delicious!

If you haven’t heard it before, there is just something about clay that makes everything better: texture, taste and nutrients. This recipe is no exception. It has so many different flavors and textures, and they blend together so nicely for a very satisfying one pot meal. I love to top this dish with sour cream and avocado: you can find your sweet spot with other toppings like hummus or yogurt if you wish!


  • 2 cups uncooked quinoa
  • 4 cups broth (vegetarian or bone)
  • 1 cup corn kernels (use organic to avoid GMOs): fresh or frozen
  • 1 red onion, diced finely
  • 3-4 cloves garlic, minced
  • 1 red or yellow bell pepper, chopped
  • 1-2 T grassfed butter or coconut oil
  • 3 cups soaked & cooked black beans
  • ½ cup chopped fresh cilantro
  • 3-4 scallions, chopped
  • Spoonful of turmeric (because I add it to everything)
  • Spoonful of cumin (optional- I actually don’t love this spice, so I leave it out, but if you like it, go nuts!)
  • 1/4 to 1/2 t cayenne (depending on how spicy you like it)
  • Real Salt (to taste)

Suggestions for garnish and toppings :

shredded cheese, hot sauce, avocado, sour cream, Greek yogurt, lime wedges


  1. Add all of the ingredients except scallions and cilantro into the clay pot
  2. Set to white rice setting and press “start”
  3. When it’s finished cooking, mix in scallions and fresh cilantro.
  4. Serve immediately, garnishing with your toppings of choice


I’ve left options for vegan and vegetarian versions based on what type of broth and oil you use. Have fun with it, sub in ingredients you love, and enjoy!
