No-Fry Crispy Potatoes from Instant Pot (Pressure Cooker) to VitaClay!

Due to customers’ requests, we converted popular pressure cooking recipes into VitaClay. Why? Unmatched results!

Other than fry's we can get healthier and more flavorful roasted potatoes for better health to prevent inflammation. High temperature cooked food not only loses nutrients and avoids cancer cause in high temperature cooked ingredients are the key. Here is the better version of roast potatoes. It is delicious and healthier! Adding meat is optional.

Ingredients:

  • 1 pound fingerling or Yukon Gold potatoes peeled and cut into uniform 1 – 1½ inch cubes
  • 2 tablespoons ghee
  • Diamond Crystal kosher salt
  • Freshly ground black pepper
  • ¼ cup minced chives or Italian parsley optional
  • Juice from ½ medium lemon optional

Directions:
1. Add 1/2 cup water in your clay pot (VM7900 models, add 1.5 cups for VM7800 models).
2. Add the potatoes and set on stew or fast to cook for 30 minutes.
3. When cooked, melt the ghee or butter over medium-high heat in a large skillet. Once it starts sputtering, carefully add the potatoes.
4. Transfer to a serving plate. Season generously with salt and pepper. Squeeze on the juice from half a lemon and toss with fresh chives or Italian parsley. Enjoy!
