This recipe is ONLY suitable with VitaClay rice maker models: VF7700, VM7900.
I like making different versions of the rice bowl, especially when it involves making things simple, one-pot style. I also love sweet potatoes. Not only are they delicious, they are easy to make and really versatile, and they are super nutritious as well.
(Whenever you buy root vegetables such as sweet potatoes, carrots, etc, be sure to buy organic, because root veggies absorb more toxins (pesticides, herbicides, chemical fertilizers, residue from other waste) from the soil than anything else--but they also absorb lots of nutrients—so just get the good stuff!)
This vegetarian dish is light and simple, but really delicious and satisfying at the same time.
Since I like to have my “lightest” meal of the day (usually vegetarian) at dinnertime to give my digestive system a rest before bedtime, this dish is perfect for dinnertime at my house.
Rice can be substituted for quinoa or another grain if you so desire. It would of course, also make a great lunch: make a bunch and pack it for school or work lunches, or take it to your next pot-luck.
