This is a vegetarian version of the traditional French dish is suitable for preparing inside a slow cooker if you have a busy schedule on the weekend or even during working days. Directions:

  1. Heat a small amount of oil inside a skillet over medium heat. Cook and stir your onion and carrots in oil until they become tender.
  2. Combine the beans, onion, carrot, mushroom broth, bouillon, and bay leaf in your VitaClay slow cooker.
  3. Cover the ingredients with water
  4.  Tie together the parsley, thyme, rosemary, and savory - add them into the pot.
  5. Cover and set the timer to 2 hours.
Remove the herbs after an hour and continue cooking. Serve your vegetarian Cassoulet hot!
