30 minutes Keto / Low Carb Meal - Chicken Francaise in Instant Clay Crock Pot Slow Cooker

Quick easy Keto Chicken Francaise, also known as Chicken Francese, which means French chicken, balanced with garden fresh salad - arugula, cucumber onion tomato olive oil and lemon juice. Tender chicken with just a few ingredients makes for a delicious meal in my VitaClay in 30 minutes! Comfort food combined with powerful ingredients (onion for immunity and arugula for anti inflammation) keeps us staying on top of the game.

     

 

Ingredients:

2 chicken breasts (about 1 lb.) thinly sliced, pounded and seasoned with salt and black pepper
2 Garlic cloves
2 oz. Butter
1/2 cup Dry white wine
1 cup Chicken stock
2 eggs, scrambled with salt and black pepper
1/2 Lemon, squeezed
1/4 cup all purpose flour
All purpose flour, seasoned with salt and black pepper for coating the chicken
olive oil
handful of parsley, chopped, for topping

Directions:

  1. In your VitaClay Multicooker, add chicken stock, lemon juice and wine in your clay pot. Mix them well.
  2. In a container, add flour, scrambled eggs, salt and pepper and mix well. Add chicken to evenly coat on each side.Transfer to your clay pot.
  3. Saute garlic in a saucepan in butter for a minute or two. Brown the coated chicken on both sides. Transfer it to your clay pot. 
  4. Set on stew to cook for 20 minutes or until chicken is cooked.
  5. Serve with a sprinkle of freshly chopped parsley. Enjoy with a side of baked potatoes, asparagus, or pasta drizzled with the gravy.
