Try this great chicken & veggies recipe I tested out recently: it was a hit! I think I've found a new family favorite!
Ingredients for Clay Pot Veggies & Honey Garlic Chicken:
- 2-3 lb chicken (I like dark meat, but a mix would be fine too)
- 1 lb green beans, trimmed
- 1 lb carrots, chopped
- 1 lb small red potatoes, halved
- 2 T fresh parsley, chopped
Sauce Ingredients:
- 2 cloves garlic, minced
- ½ choney
- ½ cketchup
- ½ c soy sauce
- 1 t basil (dry)
- ½ t oregano (dry)
- ¼ t red pepper flakes
- ¼ t black pepper (freshly ground tastes best)
Directions for Clay Pot Veggies & Honey Garlic Chicken:
- First combine all of the sauce ingredients in a bowl and set aside
- Put all of the other ingredients (chicken and veggies except green beans) into the clay pot
- Pour the sauce mixture over the chicken and veggies
- Close and cook for 1-1 ½ hours on "fast," basting with sauce every so often
- Add the green beans during the last 20 minutes (less if you want them firm)
- Serve and garnish with the parsley
- (If you want the chicken more crispy you can broil them in a 450 degree oven for about 10minutes on a cookie sheet, skin side down)
