Effortless Homemade Short Ribs: Slow-braised to Perfection in Clay Pot Slow Cooker

My fail-proof beef stew short ribs stole the show at our family potluck over the Labor Day weekend! Crafting this delectable dish was a breeze with my trusty VitaClay. The meat was incredibly juicy and tender, practically falling off the bone, all thanks to the consistent cooking temperature provided by my VitaClay.

INGREDIENTS:

  • 3-4 short ribs
  • 3 cups organic tomato sauce in glass jar, or homemade
  • 2 - 3 cups beef broth (if you use VM7800 models, add 4 cups), homemade is the best
  • 2 bay leaves
  • 1 medium onion, peeled and chopped
  • 3-4 medium carrots, peeled and cut into 1/4-inch rounds
  • 4 - 5 medium potatoes, peeled and cut into large chucks
  • Salt pepper to taste

DIRECTIONS:

  1. Brown the ribs (optional): Heat 3 teaspoons of the oil in a large sauce pan. Add onion and short ribs (2 pieces at a time; do not overcrowd). Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches. Transfer to your vitaclay clay pot.
  2. Add the rest of ingredients to your clay pot. 
  3. Set on Stew or Slow to cook until the beef is tender, about 1 1/2 - 2 hours.
