Warm Apple Supreme: Paleo and Vegetarian!

I love that apples are pretty much available all year long and that they are really versatile: they can be eaten as a snack, taken in the car for a quick bite, an addition to a meal, or even added to savory recipes like dressing or meats. Apples are great, but sometimes I find them a bit sweet to just eat raw on their own. Sometimes I add peanut butter for a filling between-meal snack, but I also love any recipe with warm apples: apple pie, spiced apples a la mode, you name it!

This is a great sweet treat for those of us who limit our sugar intake, and is so healthy it would even be a great choice for breakfast!  It can be mixed up, adding dried mangoes, cranberries, raisins or other dried fruits for a twist. If you eat dairy, it's great topped with ice cream, yogurt or whipped cream. This recipe would also be a great thing to keep covered in the fridge to add to yogurt, oatmeal or just on its own!

Ingredients:

  • 6 apples, sliced
  • 1/2 cups coconut milk
  • 2 Tablespoons apple juice
  • 1/2 cup grated coconut
  • dash of nutmeg
  • 1 Tablespoon Saigon cinnamon
  • 1 teaspoon salt
  • 1 Tablespoon vanilla extract
  • 1/2 cup dried cranberries or raisins (optional)

Directions:

  • Add all ingredients into the VitaClay pot. Seal.
  • Cook on "stew" for 2 hours.
  • Serve alone, with yogurt or creme fraiche or ice cream (not paleo).
  • drizzle with maple syrup for a taste of sweetness
If you want to throw in the ingredients at night and have this for breakfast, be sure to delay start your VitaClay cooker so it'll be fresh, hot and ready when you wake up!
