Shortcut Saturdays: Skinny Alfredo Pasta in One Pot (Vegetarian!)

You're busy during the week; there is so much on your plate, from maintaining a household to cooking healthy meals to ferrying kids everywhere they need to go.

And we haven't even mentioned earning money to pay for all of the aforementioned activities. So there's your job. There's worrying about office politics and what you'll wear and that meeting they scheduled with Beijing at 7pm on Monday.

But now it's Saturday. You're free, none of the rules apply!

We're going to play all day and sleep til noon!

But alas, you still have children. They still wake up and they still need to eat.

So you're not prepared to spend hours in the kitchen on your day off, making a yummy meal everybody can eat between birthday parties and soccer games.

That's why we're starting a weekly “Short Cut” recipe just for Saturdays.

Because your Saturday should belong to you, not to the kitchen.

Ingredients:

  • 2 c broth (bone or veggie)
  • 8 oz penne pasta (I like this gluten-free one)
  • 4 cloves garlic, minced
  • 1 T buttermilk
  • 1 c whole milk
  • 1 t salt
  • ¼ t ground black pepper
  • 4 sun dried tomatoes, chopped
  • Parmesan and chopped parsley, for garnish

Directions:

  1. Put everything except sun-dried tomatoes and garnish into the clay pot
  2. Close, seal and cook on “stew” setting for about 20 minutes
  3. When it's finished, stir in the sun-dried tomatoes and garnish with Parmesan and parsley
