Meatballs for Pot Lucks, Snacks, or over Spaghetti!

I love to have a batch of meatballs made up and frozen to throw into a dish when I need a quick meal. They’re of course great over spaghetti noodles and red sauce for a classic dinner, or toss them with Teriyaki sauce and put toothpicks in them to serve as appetizers at a party.

Another quick meal I make, especially when I’m alone is a soup of broth, some noodles and chopped veggies, and I throw in a few meatballs. It’s very satisfying, filling and delicious, not to mention warm!

And of course we know that broth is key to a healthy diet. It’s a traditional food dating back thousands of years in every traditional society. All that traditional wisdom can’t be wrong! So here’s my meatball recipe and a quick appetizer recipe to go with any dish that you'll make with you Vitaclay unit!

Ingredients:

  • 1 lb ground meat of your choosing
  • 1 egg
  • 1 T starch, such as tapioca or arrowroot
  • Sea salt and pepper
  • No-salt spice blend of your choice
  • A few sprinkles of turmeric (because I use it in everything)
  • 1-2 cloves garlic, minced
  • ½ onion
  • 2 stalks celery
  • 4-5 medium-sized mushrooms (I like the cremini mushroom variety)
  • Splash of soy sauce and/or wine
Directions:
  1. Place the ground meat in a bowl and mash it with a fork.
  2. Use a food processor to blend onion, garlic, celery and mushrooms
  3. Add veggies and all other ingredients to the meat and mix well (food processor can be used here too)
  4. Spoon meatball mixture out onto wax paper and freeze individually for 3-4 hours, then bag

*The egg and starch helps everything bind together and helps with the texture as well.

For a quick appetizer,just throw meatballs into the VitaClay cooker and cover with Teriyaki sauce. (Add a few spoonfuls of broth to the bottom to keep it wet). You can serve it directly out of the clay pot, or provide toothpicks.
