A Quick, Easy, Different Chili with Sausage in Clay

Chili is a great recipe to have as the weather cools and the leaves begin to change. This “white chili” recipe looks a little different, and it also has more of a Tex-mex flavor and spice that gives it a different flavor than your every-day chili. It will certainly be a favorite of yours, once you realize how easy it is to make with VitaClay, and how great everything tastes when it’s cooked in clay!

I love it when I find a recipe that mixes things up a bit, like Mexican-inspired chili or Asian-flavored pasta. Ingredients:

  • 2 T coconut oil or other healthy fat
  • 2 lb of your favorite sausage
  • 4 cloves garlic, minced
  • 2 lb white beans: soaked, cooked & drained
  • 1.5 c salsa
  • 1 c broth
  • 2 T finely chopped hot peppers
  • 2 tomatoes, diced
  • 1 onion, chopped
  • 1 c corn kernels (organic to avoid GMO nasties)
  • ¼ t cayenne pepper
  • 1 t cumin, ground
  • ¼ t ground black pepper
  • ½ t salt
Directions:
  1. Add everything to the VitaClay cooker.
  2. Cover, seal and set to “stew,” cooking 1-2 hours.
  3. Keep it warm in the clay pot until you’re ready to serve.
  4. Garnish with cilantro and serve with chips or bread.
