Summer Chicken Tagine with Apricots, Rosemary & Ginger

A One-Pot Adventure for Your VitaClay Nourishing Pot

One of my favorite travel companions is the VitaClay Nourishing Pot. It lets you prepare wholesome, home-cooked meals almost anywhere there’s electricity. While you explore, read, paddle, or simply relax with family, dinner gently cooks itself.

This Moroccan-inspired chicken tagine is sunshine in a bowl. Sweet apricots melt into juicy tomatoes, fresh rosemary perfumes the broth, and ginger adds just enough warmth to make every bite comforting without being heavy. It’s the kind of meal you gather around after a day outdoors.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 rosemary sprigs
  • 3 inches fresh ginger, peeled and finely chopped
  • 2 fresh red chilies, deseeded and chopped (optional)
  • 1–2 cinnamon sticks
  • 8 bone-in chicken thighs
  • 1 cup dried apricots
  • 2 tablespoons honey
  • 1 (14 oz) can whole plum tomatoes with juice
  • Sea salt and freshly ground black pepper
  • Fresh basil or parsley for garnish

Serve with:

  • Couscous
  • Brown rice
  • Quinoa
  • Rustic bread

Serves 4


Directions

Step 1 – Build the Flavor

In a large saucepan, heat olive oil and butter.

Sauté:

  • Onion
  • Chopped rosemary
  • Ginger
  • Chilies

Cook about 8 minutes, until fragrant and softened.


Step 2 – Brown the Chicken

Add the chicken thighs.

Brown each side for about 3–4 minutes.

This extra step builds incredible flavor.


Step 3 – Transfer to VitaClay

Move everything into your VitaClay clay pot.

Add:

  • Rosemary sprigs
  • Cinnamon sticks
  • Dried apricots
  • Honey
  • Tomatoes with all their juices

If needed, add ¼–½ cup water or chicken broth so the liquid lightly surrounds the ingredients.


Step 4 – Slow Simmer

Cover with the clay lid.

Select Stew.

Cook for 45–60 minutes, or until the chicken is fork tender.

The gentle clay heat allows the apricots to soften naturally while the rosemary, ginger, cinnamon, and tomatoes become a rich, fragrant sauce.


Step 5 – Finish

Remove the rosemary sprigs and cinnamon sticks.

Season with sea salt and freshly ground pepper.

Scatter fresh basil or parsley over the top.

Serve with fluffy couscous, rice, or warm crusty bread.
