A hearty and comforting Mediterranean lentil soup made with green or brown lentils, carrots, celery, potatoes, tomatoes, leafy greens, and warming seasonings. A wholesome, vegetable-packed meal that’s perfect for an easy lunch or family dinner.
Dice the onion, carrots, and celery. Cube the potatoes and mince the garlic.
Add the lentils, onion, carrots, celery, potatoes, garlic, diced tomatoes, vegetable broth, olive oil, oregano, paprika, cumin, salt, and black pepper to the VitaClay clay pot.
Gently stir to combine.
Cover with the clay lid and select the Soup setting for about 1.5–2 hours, or until the lentils and potatoes are tender.
Toward the end of cooking, stir in the chopped kale or spinach and allow it to cook until tender.
Stir in the lemon juice. Taste and adjust the salt and black pepper as needed.
Ladle into bowls and garnish with fresh parsley. Serve warm.
