What Is Hobo Stew?
Hobo Stew is a flexible, old-fashioned meal traditionally made with affordable pantry staples and whatever vegetables are available. There is no single “correct” version. Ground beef, potatoes, tomatoes, and mixed vegetables form the base, but you can easily make it your own.
1 cup frozen or canned green beans, drained if canned
3–4 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon freshly ground black pepper
Salt to taste
Chopped parsley for serving, optional
Directions
In a skillet over medium heat, brown the ground beef with the diced onion. Break the meat into small pieces as it cooks. Add the garlic during the final minute, then drain any excess fat.
Transfer the beef mixture to the VitaClay Nourishing Pot.
Add the potatoes, carrots, celery, diced tomatoes, tomato sauce, corn, green beans, beef broth, Worcestershire sauce, smoked paprika, Italian seasoning, black pepper, and a little salt.
Stir gently to combine. The ingredients and liquid should remain below the cooker's maximum fill line.
Cover and select Stew or Soup. Cook for approximately 2 hours, or until the potatoes and carrots are tender. Cooking time may vary slightly depending on how large the vegetables are cut.
Stir, taste, and adjust the seasoning. If you prefer a thinner stew, add a little more hot broth before serving.
Spoon into bowls, finish with chopped parsley, and dig in while it is hot.

Stir in peas during the final 15 minutes.
