1 cup coarse polenta
4 cups vegetable broth
8 oz mushrooms
2 tbsp butter
½ onion diced
2 garlic cloves
½ cup Parmesan
Fresh thyme
Salt
Pepper
Parsley
Sauté mushrooms, onions and garlic until lightly browned (optional for deeper flavor).
Place broth, polenta, mushrooms and seasonings into the VitaClay.
Select Oatmeal.
Cook 30 minutes.
Stir in Parmesan and butter before serving.
