A few weeks back you talked about the goodness of Vitamin C and Lycopene. Today we are continuing on our summer goodness theme with Vitamins A and E:

Vitamin A

Where to find it:  eggs, liver, fish oils, milk fat, carrots, apricots, broccoli, collard greens, kale, sweet potatoes, parsley, spinach, mangos (think greens, yellows and oranges)

Storage: as fat-soluble vitamin it needs fat present for proper uptake and is are stored in the body’s fatty tissues. While it is stored it is important to consume regularly to ensure you have enough for proper functioning.

What it does: essential for proper vision (esp. night vision), cellular growth, function and communication,immune function, reproduction, bone & teeth formation and function.Works as an antioxidant.


Vitamin E

Where to find it:  seeds, nuts, whole grains with the bran & germ intact, spinach, broccoli, peanuts, milk fat, egg yolks

Storage: as fat-soluble vitamin it needs fat present for proper uptake and is are stored in the body’s fatty tissues. While it is stored it is important to consume regularly to ensure you have enough for proper functioning. 

What it does: strongantioxidant involved inimmune function and cell signaling
