There is nothing quite like a sweet, cold, refreshing yogurt snack on a hot day. Yogurt also makes a great dessert--it's high in nutrition, probiotics and protein, and in this recipe you can control the sugar and sweetness.

Store-bought yogurt often does not contain as many probiotics or as much nutrition as fresh yogurt made at home, but who has time for that? It may seem a daunting task if you've never made yogurt before, but with VitaClay, making yogurt is so easy, so fun, and so inexpensive! You'll wonder why you ever bought yogurt at the store!

For just the cost of milk, you can keep a constant supply of fresh, healthy, probiotic-rich yogurt at all times to add to smoothies, make sauces, or just snack on! And if you've never tried clay-batch yogurt, you're in for a treat!

Ingredients:

  • 5 tablespoons of unflavored yogurt or 1 tablespoon of culture
  • 32 oz of milk
  • 1/2 cup chopped fresh fruit
  • 4 T raw honey or coconut sugar (to taste)
  • 1 cup water

Directions:

  1. Add milk and culture (either previous batch of yogurt, store bought yogurt "with live and active cultures, or a powdered yogurt culture) to the VitaClay pot and stir.
  2. Activate the "yogurt" setting for 8-9 hours.
  3. Cook the fruit, sugar and water over low heat in a separate saucepan for 10-15 minutes or until thickened (if using honey, don't cook it! Stir it into the cooked fruit afterward).
  4. After the yogurt has finished incubating, add the fruit to the yogurt. Use a hand-immersion blender for smoother consistency.
  5. Chill in the refrigerator in the clay pot for at least 2 hours, top with fresh fruit to garnish, then serve!
