VitaClay Lemon Chicken Piccata: A One-Pot Meal to Fall in Love for Dinner

Just another family dinner favorite is here! This creamy, lemony sauce-coated noodles with juicy lightly breaded garlicky chicken, topped with savory capers are drool-worthy. It’s so easy to make, just toss everything, even the pasta, in your Clay pot and dinner will be served in a flash. Your family will surely love this delicious one-pot dinner!

Ingredients:
  • 2 large boneless skinless chicken breasts cut in half lengthwise
  • 1/4 cup flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 ounces linguine noodles or thin spaghetti noodles or any noodles you like
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • juice of 1 lemon about 4 tablespoons
  • 1/4 cup capers

Instructions:
  1. Whisk together flour, garlic powder, salt, and pepper. Coat both sides of chicken in the flour mixture.
  2. Drizzle a large skillet with oil, cook chicken over medium-high heat for 1-2 minutes on each side to brown.
  3. Place chicken in your clay pot in a single layer, add linguine, pour chicken broth over the top and cook on stew for 20 minutes.
  4. Uncover, stir in lemon juice, heavy cream, salt, and pepper to taste and cook for another 10 minutes or until cooked.
  5. Serve with additional lemon slices and fresh thyme if you like. Enjoy!
