One Pot Wednesdays with Clay: Brown Rice Pork Pot

It's that time of the week again: hump day! And you know what that means... 

It's One-pot Wednesday!

Here at VitaClay we love to make your day easier. A big part of a healthy day is cooking your meals at home, so our goal is to make cooking as healthy and as easy as possible. What can make cooking easier than simplifying every step in the process: prep, cooking and cleanup?

That's what One Pot Wednesdays are all about! This Brown Rice Pork Pot is delicious: the combination of the brown rice and the hint of wine (don't worry; the alcohol all cooks out!) and the pork just combine to create a wonderful, unique flavor.

But what's great about this recipe is that is can be changed easily. You like white rice? No problem! Use that instead! Want tri-tip or chicken? Just sub it out!  So this is really several recipes in one: do it however you like. Ingredients for Brown Rice Pork One Pot:

  • 1 lb port tenderloin, sliced thinly

  • 1 red onion, diced

  • 2 cloves garlic, minced

  • 1 c red wine

  • 2 stalks celery, chopped

  • 2 t dijon mustard

  • 2 tomatoes, diced

  • 1 cup broth

  • 1 cup brown rice, soaked and drained

  • 1 t dried oregano

  • ¼ t cayenne

  • salt & pepper to taste

Directions for Brown Rice Pork One Pot:

  1. Put all ingredients into the clay pot

  2. Close, seal and set to “brown rice” setting

  3. After the cooking cycle ends, the machine will beep. Wait 15-20 minutes for the rice to finish steaming before serving.
