One Pot Red Rice & Chicken: Perfect in Clay! (7700 & 7900 ONLY!)

As you may know by now, my favorite kind of meal to cook, especially when I'm busy, is a one-pot meal.Luckily there are tons of ideas for one-pot meals that are delicious, healthy and versatile.

I've done other variations of rice-and-meat one pot dishes, but this one is a bit different, because I don't usually add a lot to flavor the rice.

This dish has a tomato base, and if you like it spicy, you can add in Tobasco, Siracha, or other spicy sauce of your choice (which will also give it varying ethnic flavors as well).

If you're tired of rice, you can substitute in quinoa or another grain, and it will turn out just as nice.You're also welcome to add in beans for a healthy protein-fiber boost.

Ingredients:

  • 1 lb chicken, cut into bite-size pieces (I like to add both white and dark meat)
  • 1 ½ c uncooked rice
  • 1 medium onion, chopped
  • 2 ribs celery, diced
  • 2-3 cloves garlic, minced
  • 1 t no salt seasoning of your choice (I like this one)
  • 3 c broth (make your own with the recipe below)
  • 1 T fresh parsley, chopped
  • Tabasco or other hot sauce, to taste (more for hotter—or none at all if you like it mild!)
  • 2 -3 tomatoes, diced
  • 16-18 oz tomato sauce
  • salt and pepper, to taste

Directions:

  1. Add everything into the VitaClay pot
  2. Close, seal and cook on “rice” setting (brown or white, according to the type used)
  3. After it beeps, the cooking cycle is done; but don't open it
  4. Allow it to rest for 15 minutes to fully steam the rice (trust me, it's worth it)
