Moroccan Peanut Sweet Potatoes in VitaClay!

Suitable for VitaClay Models: VS7600, VF7700, VM7900

I’ve read so much about sweet potatoes and how they are really good for me. But I never fully realized their potential until recently. Sweet potato casserole and candied yams are good, but can be a hassle for an everyday meal. 

Could I just get an easy recipe that I can throw into my clay slow cooker? I ran across this recipe in a magazine a couple of years ago and earmarked it to try and adapt to VitaClay. I am so glad I did. This is one of the best dishes ever. If you want something unique to bring to a holiday party or pot luck, you’ve found it.

People will ask you for this recipe! It has peanut butter, so let people know that in case of peanut allergies. But there is just something about the peanut butter that really brings out the sweetness of the sweet potatoes. The salty and sweet are perfectly balanced here, and the peanut flavor just makes it pop. Now I’m hungry.

Allergen warning: contains peanuts

Ingredients:

  • 2 sweet potatoes, peeled and cubed
  • ½ c creamy or chunky peanut butter
  • 1 T sea salt
  • 1 T ground cumin
  • 2 c water or broth (recipe below!)
Directions:
  1. Pour broth into clay pot.
  2. Load all other ingredients into pot
  3. Close and seal, and set cooker to “stew” for 1 hour.
  4. Open and mash with a potato masher or blend with an immersion blender for a smoother consistency.
