Loaded Potatoes Made in 50 Minutes in VitaClay Fast Slow Cooker

I love potatoes! It doesn't matter whether they're baked, mashed, fried, roasted or boiled; potatoes make any meal better! The fact that they're loaded with a range of vitamins from potassium to vitamin C, vitamin B, folate and many more makes me swoon for them! In the season of sickness, one thing's for sure; you got to be healthy while filling up your tummy. And here's one very simple dish to add up to your healthy menu!

Ingredients:

  • 4 large baking potatoes
  • salt to taste (kosher)
  • 4 tablespoons butter
  • 1/2 cup sour cream (plus more for serving)
  • 1/2 cup milk (or half-and-half)
  • 2 cups/8 ounces cheddar cheese (sharp, shredded; divided)
  • 4 tablespoons green onions (chopped, divided)
  • salt to taste
  • black pepper to taste
  • 8 strips bacon (cooked, drained, and crumbled, divided)

Directions:
1. Add 1 cup of water and potatoes in your VitaClay pot.
2. Set on stew or fast for 50 minutes.
3. Cut lengthwise slits in the top of each potato. Carefully scoop out the flesh from the center of each potato into a medium bowl, then add, sour cream, chives, green onion whites, half the cheddar, and half the bacon. Season with salt and pepper.
4. Spoon filling back into each potato, mounding it on top. Sprinkle with remaining cheese and return to oven until melted about 5 minutes. Top with scallion greens and remaining bacon.
