Energy-Reviving Beef Noodle Soup in VitaClay Slow Cooker

Ingredients:

  • 2 1/2 lbs bone-in beef short ribs
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 large onion, chopped
  • 3 medium carrots, chopped
  • 2 large celery stalks, chopped
  • 5 garlic cloves, minced
  • 64-ounce beef broth
  • 1 (14.5 oz) can diced tomatoes with juice
  • 2 or 3 bay leaves
  • 3 cups uncooked egg noodles
  • salt and pepper to taste
  • fresh green onions-sliced, for toppings

Directions:

  1. Season the short ribs with the salt and pepper.
  2. Place ribs in your VitaClay slow cooker. Add onion, celery, carrots, garlic, tomatoes and bay leaves over the ribs. Pour broth, cover and cook on “stew” for 2-3 hours or until meat is tender.
  3. Once the beef is tender, remove from the slow cooker. Use a fork to remove the beef from the bones into small pieces. Remove and discard the bay leaves from the slow cooker.
  4. Add egg noodles to the broth and cook for another 10 to 15 minutes or until the noodles are cooked.
  5. Stir meat back into your cooker and season with salt and pepper. Serve with green onions on top.
