Clay Cooked Italian Stew: Best One Pot Meal!

The weekend is again upon us, and I know the last thing I want to do is spend all weekend in the kitchen preparing meals. I like to cook, but the weekends are for fun!

Relaxing! Soaking up some sun on these lovely Spring Days! It's on these days that I love my VitaClay. One pot meals are so easy, delicious and healthy when made in my clay cooker. I don't have to do anything but throw the ingredients in.It's ready when I am! I can even program it to start later so my meal will be ready, hot and fresh when I want to eat!

No more soggy meals that have been sitting in the slow cooker for hours on end. Because it seals and forms pressure while cooking, it cooks up to 75% faster than traditional slow cookers!

So this weekend I'm going to make the most of it and get to playing, not cooking, with this yummy one pot meal.

Ingredients for Clay Cooked Italian Stew:

  • 1 lb of your favorite sausage (without casings) or meatballs
  • 6 C broth
  • 1 red onion, chopped
  • 3 lb beans (I use white), soaked, cooked and drained
  • 2 tomatoes, diced
  • 2 potatoes, cubed
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • ½ t salt
  • ½ t black pepper
  • 3 c kale, chopped

Directions for Clay cooked Italian Stew:

  1. Add all ingredients except for kale
  2. Close and cook on "fast" setting for 30 minutes
  3. Stir in kale and cook another 15-20 minutes
