Chicken with Mushrooms, Carrots, and Thyme

Chicken is a great, versatile meat because it’s familiar, easy to prepare and everyone likes it.

It’s easy to get into a rut with chicken, making the same thing every time. With VitaClay, it’s easy to mix up your weekly routine and still use the same basic ingredients to create a fresh twist on an old classic. No one will ever get bored with that!

This recipe was adapted from Weight Watchers, so we know that it has built-in portion control and a healthy bent, while still being delicious and satisfying. I love using dark meat, so if breast isn’t your cup of tea, mix it up--just be aware that calorie and nutrition information will change slightly.

Browning the chicken in a pan before adding it to Vitaclay also adds rich color and flavor.

Ingredients:

  • 2.5 c broth (nutrient-dense and easy to make in VitaClay!)
  • 3 T all-purpose flour
  • 12 oz medium carrots, peeled and cut diagonally into ½ inch thick slices
  • 8 oz crimini mushrooms, quartered
  • 4 thyme sprigs, plus 2 tsp fresh thyme leaves
  • 1 T minced fresh garlic
  • 4 x 6 oz chicken breast halves
  • ¾ t real salt
  • ¾ t black pepper
  • 1 T coconut oil
  • 1 T sherry vinegar

Directions:

  1. Mix the broth and flour well in the clay pot.
  2. Add in all veggies.
  3. Brown the chicken each side for 3 minutes (optional)
  4. Add chicken and remaining ingredients to the Vitaclay pot.
  5. Set on "stew" for 30 to 40 minutes.
