Chicken Noodle One Pot Casserole in Clay

There's nothing like chicken noodle soup for comfort food when you're feeling under the weather.

But now it's springtime and we're mostly over the cold-and-flu portion of the year, at least until after summer.

Does that mean we don't need comfort food? Of course not.

Even though the weather is warming up and we might not be in the mood for soup all the time, it's still nice to have those delicious and comforting flavors that we crave.

This chicken noodle casserole reminds me of chicken noodle soup, but it's really substantial and filling; just what I need after a hard-playing day in the sun (or at  work).

Ingredients for Chicken Noodle One Pot Casserole In Clay:

  • 2 cups of cooked (or uncooked) chicken, chopped
  • 6-8 cups broth
  • 8-10 oz mushrooms, sliced
  • 1carrot, peeled & sliced
  • 10-12 oz noodles of your choice
  • 6 Tbutter
  • 1/4 c flour (or tapioca starch or other thickener)
  • 1red onion, diced
  • 1c heavy cream
  • Chopped parsley (about 2 T)
  • 1c shredded cheese
  • 2 sprigs thyme
  • salt and pepper, to taste

Directions for Chicken Noodle One Pot Casserole In Clay:

  1. Stir the flour or other thickener into a bit of the broth until it forms a paste
  2. Add all of the ingredients except shredded cheese into the clay pot, stirring to incorporate the paste into the liquid
  3. Close and cook on "fast" setting for 30 minutes.
  4. When ready to serve, top with the shredded cheese
