Ingredients

  • 2 limes juiced
  • 4 cloves garlic crushed
  • 1/2 cup orange juice
  • 1 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 jalapeno minced
  • 2 tablespoons white vinegar
  • 2 pounds flank or skirt steak

 Instructions

  1. Combine lime juice, crushed garlic, orange juice, cilantro, salt, pepper, olive oil, jalapeno, and vinegar in a bowl.
  2. Put the entire flank steak into your clay pot and pour mixture over the steak.
  3. Set on “Stew” to cook for 2 hours or until tender.
  4. Once done, remove from the cooker and let rest for 10 minutes. Slice against the grain, and serve.
  5. If you want to thicken the sauce, take cooked steak out, open the cooker cover to let it continue to cook for 20 minutes or until the sauce is thickened. Bring cooked steak back in the thickened sauce to simmer for 5 minutes.
