Artichoke Turkey stew served with multi-seed sourdough

I love artichokes with chicken, but last night, I found myself with a turkey breast and a craving for artichokes. As I searched for artichoke chicken recipes, I noticed most were rich Italian dishes. Don't get me wrong, I'm a big fan of Italian cuisine! One of my favorite Italian spots is Macaroni Grill! I've even recreated their dishes at home using VitaClay:

However, with limited time and ingredients on hand before heading to the gym, I decided to improvise. I whipped up a Turkey Artichoke Potato stew with leeks at the last minute, and it turned out amazingly! This morning, I woke up feeling refreshed. It feels like a double win - enjoying a comforting light dinner while getting a good night's sleep and unwinding!

No oil or butter necessary!

Ingredients:

  • 1 lb turkey breast
  • 1 jar of grilled artichokes
  • 6 small potatoes, peeled and chopped
  • 1 leek, cut into 1/2-inch pieces
  • Turkey seasoning
  • 1/2 cup of white wine, broth, or water
  • grass fed butter (optional)

Directions:

  1. Add all ingredients to the VitaClay clay pot.
  2. Set to stew mode and cook for 40 to 60 minutes.
  3. Once cooked, shred the turkey in the pot.
  4. Serve with sourdough bread.

Notes:  if you use vm7800 models, add extra 3 cups water.
