Amazing Clay Quinoa and Sweet Potato Chili

Ingredients for Quinoa and Sweet Potato Chili:

  • 1-2 sweet potatoes, diced
  • 1cup soaked & cooked black beans, drained
  • 1cup soaked & cooked kidney beans, drained
  • 2 tomatoes, diced (about 1.5 cups)
  • 1red onion, diced
  • 6 oz tomato paste
  • 1cup uncooked quinoa
  • 5 garlic cloves, minced
  • 1 T cumin powder
  • 1 t oregano
  • garlic powder, to taste
  • onion powder, to taste
  • sea salt, to taste
  • black pepper, to taste
  • 5 T chili powder
  • broth to fill the pot (6-10 cups)
  • avocado, sour cream, cilantro and/or diced onion, for garnish (optional)

Directions for Quinoa and Sweet Potato Chili:

  1. Add all ingredients to the clay pot (except garnishes)
  2. Close and cook on "slow" or "soup" setting for 1-2 hours
  3. Serve and garnish as desired
