How to make Vegan Coconut Yogurt in VitaClay Slow Cooker?

I love to make yogurt--I’m able to control the ingredients that to (and don’t) go in it, sweeten it to my liking and make it in clay--which makes the best yogurt ever!

Plus VitaClay makes yogurt-making so simple--simply add the ingredients to the pot and press a button!

Making yogurt is an art and a science, however, especially when using different types of milk and cultures.

Recently we were asked to develop some non-dairy yogurt recipes in VitaClay so that our vegetarian friends will always have the convenience and benefits of making non-dairy yogurt right in the clay pot.

We developed the following coconut yogurt recipe and we really like it! Let us know what you think and what you like to eat it with! (We like it with berries and honey).

Ingredients

  • 1 can coconut cream
  • 4 capsules probiotics
  • 1 T coconut sugar (optional)
  • Blender (hand immersion or regular)

Directions

  1. Blend the contents of the coconut cream can until smooth
  2. Add to VitaClay pot
  3. Stir in contents of probiotics capsules and sugar (if adding)
  4. Close, seal and press slow cooking button to select “yogurt”

(Default time is 8 hours)

After 8 hours elapses, allow to rest another 12-15 hours
Strain, Serve and enjoy!
Refrigerate the leftovers
Great with honey or fruit! When you strain it out, use the probiotic-rich resulting “coconut whey” in smoothies or just drink it for a refreshing, nutrient-rich beverage.
