Slow Cooker: Lentil And Quinoa Tacos!

Who Says Taco Tuesday Can't Be Vegan? This recipe is super quick and super easy, just a 15 minute morning prep, add all your ingredients into your VitaClay slow cooker and set the timer. When you get home you have a Taco Tuesday Fiesta waiting for you. Add your favorite taco toppings to make them your own, there's no wrong way to make your taco.

Ingredients:

  • 1/2 cup brown lentils
  • 1/2 cup quinoa, rinsed
  • 4 cups water
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 12 soft or hard taco shells

Directions:

  1. Combine the lentils, quinoa, water, garlic, chili powder and paprika in your VitaClay slow/rice cooker. Mix well.
  2. Cover and cook on the "stew" setting for 1 hour.
  3. When slow cooking is complete adjust taste by adding salt and pepper as desired.
  4. Serve in taco shells or even as a taco salad.

Some suggestions for toppings:

  • lettuce
  • avocado
  • salsa
  • tomato
  • jalapeno

Tacos go great with a side of rice and beans! Yields about 12 tacos – though not necessarily 12 people!
