Low Carb Paleo Well Balanced Chicken Fajitas

Low carb paleo well balanced chicken fajitas with onion pepper and mix whole grains, using the leftover chicken roast made in my VitaClay! Onion is one of the best foods for your heart & lungs. These amazing foods help in reducing inflammation, fight infection and lower your cholesterol levels.

Ingredients:

  • 1.5 lbs chicken breast or roasted chicken meat made in VitaClay
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 medium sweet onion, sliced
  • 3 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili pepper
  • 1.4 teaspoon ground paprika
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons lime juice

Directions:

  1. In a small bowl, whisk together oil, lime juice, cumin, paprika, salt, pepper and chili pepper.
  2. Add 1/2 cup water and chicken strips to your VitaClay pot. Pour oil and seasoning mixture over chicken.
  3. Layer sliced pepper onion on top of the chicken.
  4. Set on stew to cook for 20-30 minutes for cooked chicken or cook for 30-40 minutes for raw chicken or until chicken is cooked through. (Note: this is good for models of VM7900 or VF7700. If you use model of VM7800, pls add 4 cups water, place all ingredients in a bowl placed on top of the water inside your stockpot.
  5. Serve chicken and peppers with rice in flour tortillas. Garnish with chopped cilantro (or parsley) and a dash of crushed red peppers.

Another option is you can add the water to the bottom of the clay pot and set the chicken and veggies on a trivet. You can also remove the chicken and peppers after cooking, set on a baking sheet and broil for 5 minutes.
