Hearty Lentil Soup, Full of Flavor Perfectly Cooked in my VitaClay for 40 Minutes or an Hour

In just 10 minutes of prep time and set it to go! Go for a walk and come back with a nutritious meal with abundant fresh veggies! Serve with warm cornbread or biscuit. Very yummy!

Ingredients:
  • 1 onion, chopped
  • 1/4 cup olive oil
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 2 cups crushed tomatoes
  • 2 cups dry lentils
  • 8 cups of water
  • 1/2 cup spinach, rinsed and thinly sliced
  • 2 tablespoons vinegar
  • salt to taste
Directions:
1. Add all ingredients in your VitaClay pot except onion garlic.
2. Set on soup or stew to cook for 1 hour.
3. Sauté onion garlic in a sauce in oil for a few minutes or until translucent. Transfer to your clay pot. Close cooler cover and continue to cook for the rest of the time. Serve hot.
